- Affronteremo temi che chiariscono il concetto dei "vini vulcani":
uve coltivate su terreni vulcanici (attivi o spenti), suoli caratterizzati dalla presenza di rocce vulcaniche, cenere e lava, che conferiscono alle uve certe caratteristiche organolettiche molto identificative.
- Viene spiegato come il suolo vulcanico si differenzia da altri suoli:
Il terreno determina la qualità e il sapore del vino, distinguendolo dalle altre tipologie di vino. Su questi terreni (spesso i pendenza) si trovano spesso le viti a piede franco (che non hanno il piede "americano"). Questo conferisce alla piante maggiore longevità e robustezza, ma soprattutto resistenza alla siccità.
- Segue la degustazione multi-sensoriale :
I suoli vulcanici sono particolarmente ricchi di fosforo, di magnesio e di potassio: ne derivano vini perlopiù bianchi caratterizzati da una complessità e sapidità difficilmente raggiungibili da altri suoli, e soprattutto da grande mineralità e acidità.
