Overview
Unlike wheat flour, buckwheat flour is extremely difficult to handle, and manual soba making is impossible without freshly ground buckwheat flour.
Our expert buckwheat grinders, buckwheat flour selection, and kneading methods make it possible for even amateurs to take on the challenge of making this difficult task in just 30 minutes.
We use buckwheat flour from Shinshu, the most flavorful buckwheat flour in Japan, and we also use clean water that is double filtered.
Breaking with conventional buckwheat noodle making practices, we have made the process thoroughly understandable and simplified the techniques, making it very popular among Japanese people.
Until now, soba making classes were just soy sauce soba.
We have prepared a variety of flavors to make it more palatable and tastier for various generations in various countries.
In addition, the tools, fixtures, and even the decorations that adorn the space are all designed to enhance the soba theme.

What To Expect
This is an activity where you can experience cutting soba noodles (without using wheat flour) at an open kitchen studio in Kappabashi, Asakusa.
Challenge yourself to make thin and long soba noodles using a large knife specially made for soba!
The soba noodles you cut yourself can be enjoyed as meals or snacks with various flavors.
You will experience the three steps of rolling, cutting, and eating soba noodles using high-quality buckwheat flour from Shinshu (Nagano Prefecture), which is known for being the most flavorful in Japan.
You can enjoy a food entertainment experience with RAKUJYO's original smart technique that allows you to make fine soba noodles in just 30 minutes.
Our store is located 15 minutes by rickshaw from Sensoji Temple in Asakusa, on the Kappabashi Kitchen Tool Specialty Shop Street.
The spacious and open ground floor restaurant is large enough to accommodate up to 25 people for groups to enjoy in a relaxed atmosphere.
