In this tour, he dives deep into the history, evolution, sociology, economics and current state of the soup dumpling, telling stories of modern China through the lens of the dumpling. He brings 20 years of Shanghai experience and personal connection to food in the city.
This is not a simple stop-and-eat food tour, but a nerdy and personal deep dive into an iconic snack and the industry and world around it. It is not about "hidden gems" or being the most obscure; it is all about providing context for the city, its food and its dumplings, gained through years of interviews, research and firsthand experience.

We start all tours here at this iconic Shanghai soup dumpling restaurant, with the basics of what a soup dumpling is, and get deep and nerdy in the sociology, economics and history behind Shanghai's favorite dumpling.

Our third stop is a small Wuxi-style soup dumpling shop, where the dumplings are bigger and sweeter. It is not listed on TripAdvisor or Google, but it's in this area.

We finish the tour not with dumplings but with very classic Shanghai noodles in a unique spot, with a very special boss known for cursing at customers who don't eat quickly enough (more of a legend than the reality).
